Cosa c'è di più frenetico della vita e del lavoro dei camerieri, se vi immaginate cosa capita nella sala,
non immaginerete mai quello che succede, nelle cucine e nel back-stage di questo grande spettacolo che è la ristorazione.
La canzone racconta la velocità con cui un cameriere passa da una tavolata di 300 persone ad una coppia al loro primo appuntamento, per finire ad una famigliola con la madre incazzata ed i bambini che combinano il finimondo; il tutto condito con insulti richieste impossibili e lamentele da parte dei clienti.
Il brano è uno swing veloce con walking bass e chitarra in quattro che sostengono la sezione fiati e la voce. Qui il sassofonista PIERGIORGIO CAVERZAN fa uno degli assoli più belli del del disco, tipico solo "bop" che difficilmente viene usato all'interno di una canzone.
Il tutto si conclude in stile jazz con gli scambi in quattro tra batteria e pianoforte.
